The rules on spielbyweb state "When the second stack of animal cards is exhausted, the round is likewise played to the end and the game finishes with a final scoring round."
So say you are playing a 5-player game. And the animal deck is exhausted during the 5th player's turn. Then the game will end immediately after his turn. Therefore, if you are the 1st player, and say there are 6 animal cards left in the deck, you have to guess whether or not they will be exhausted that round or if you will get 1 or more turns.
I personally do not like this ending. I wish that once the animal deck is exhausted that EVERY player gets one more turn (kind of like the ending in Ticket to Ride when 1 player reaches two trains). |

On a side note: Hans Im Glueck has published a "Beiblatt"(additional paper to the official rule) , which contains variants and hints. We've tried to provide some warning mechanism for the end of the game by highlighting the animal deck count in red when it's possible that the players after you could buy animal cards and end the game before you get another turn.
The Beiblatt sheet included with the game describes the two official variants to Hacienda, both of which are implemented here and neither of which changes the game end conditions.

This is not an uncommon game-end process, and yes, it does mean that if you are an early player, you do have to determine how likely it is that the game will end on that turn. This type of ending is especially appropriate when there is an advantage to going first, but in any event, it ensures that all players have an equal number of turns. In a game where you get a fixed number of actions per turn, and each action adds (potentially) to your score, why should any player get more turns than any other player?
The only fair alternative would be to have the game continue for an entire extra round, and some games do this. But in Hacienda, where there are limited resources available, the early pllayers have an advantage over the later ones. Allowing them to play out one more set of tiles or pick up one more water, hacienda or harvest tile -- possibly depriving later players of that chance -- doesn't make sense.
So you just have to plan better and figure out how likely you are to get another turn. But you always have to do that in the endgame. It's just easier if you're a later player, because you only have to figure out if the ones who come after you have an incentive to end the game. |

Just like Thurn and Taxis..end the game that round till the last player has gone either by building a 7 carriage route or building all of their houses.
At least you can make an educated guess as to when the game will end unlike in Union Pacific. |
